Neglect blog much?
We made the season’s first fish tacos last night. I’m not sure why we don’t make these all the time, but spring and summer seem more suited to fish tacos.
The better-half grilled a tilapia fillet using the grill pan. And, I made guacamole, a cabbage salad/slaw thing and black beans. We had some salsa from last year’s canning extravaganza and decided it was too spicy and so we pitched the contents of all the remaining jars.
Yes, I just said something was too spicy. It was all about the peppers and not a damn thing about the other ingredients. We’ve opened several of the jars over the past few months and every jar contained salsa that wasn’t worthy. Life is way too short to eat crappy salsa.
Behold, the fish taco:
I just had to re-read that sentence about the salsa being too spicy. I thought I had read it wrong. I’m with you on the fish tacos, although I prefer corn tortillas. Not a fan of the flour ones unless it’s breakfast burritos. Then the flour ones can be stuffed full of the breakfast-y goodness.
Corn tortillas are the best. They are hard to find here and we’re lazy and don’t make our own nearly often enough.
It was really sad about the salsa. It should have been better. I’m going to try the recipe again (in a smaller batch) with a few less peppers this time.
We harvested the first asparagus today. We got 6 on the first cut, but 4 of them are so small and skinny. I see some nice, fat ones coming up now. Have you cut any yet?
We cut four. One was as big around as someone’s large thumb (I have skinny fingers) and the others were pretty “regular” sized. We ate those pretty quickly. We cut another thumb sized one last night and there are several more of various sizes that should be good to go by the weekend. The first cooked batch was awesome.
