Is This A Problem?

Thunder, crackling lightning, stiff wind, brown-outs. Everything screams major thunderstorm on the horizon.

I run upstairs to turn off my computer but then become side-tracked looking up a recipe for a mojito.

    I am going to have to try one of those. That’s the drink I keep hearing about lately. Do you have a recipe you can recommend?

    The two I made on Friday night just didn’t do it for me. I think instead of adding the sugar, I’ll make a simple syrup next time. I’ve seen recipes where you make the simple syrup with mint leaves to help infuse the flavors. I figure I’ll just keep trying until I perfect the drink. The best I’ve had lately was while we were on our trip to Vancouver. The bar used crushed ice. Our ice maker only makes cubes and I’m kind of lazy about using the blender for 1 or 2 drinks.

    Here’s my recipe (which is basically Bacardi’s recipe):
    12 fresh spearmint leaves (I just used mint from the grocery store–the package says Mint so who knows what variety of mint)
    1/2 lime
    2 tablespoons simple syrup (equal amounts sugar and water heated until sugar dissolves, cooled) or 4 teaspoons sugar (the recipe for this I’ve seen says 3 parts water and 2 parts sugar–I’d chop up a healthy dose of mint and put that in too)
    Ice
    1 1/2 ounces light rum (recommended: Bacardi)
    Club soda
    Lime wedge and mint sprig, for garnish

    In a tall glass, muddle or mash together the mint leaves and lime. Add the simple syrup or sugar and fill the glass with ice. Add the rum and top with club soda, stir well. Garnish with a lime wedge and a sprig of mint.

    I didn’t have a whole lot of luck using a spoon to muddle (I’ve seen a muddler–they look like little baseball bats), so I think next time I’ll make the simple syrup with mint and then beat up additonal mint leaves before putting them in the glass.

    Thanks for the recipe. It sounds pretty good. I saw this on the menu at Uno’s the other day and thought it sounded really good.

    “What could we do to enhance this blend of Barcardi Limón and mint? Just add the right touch of pomegranate, top with club soda and it will make your senses soar.”

    I had a couple of their pomegranate margaritas the other day and they were delicious! Of course they were about $9 apiece!
