Personal Record

Last night the better-half and I gave each other high-fives because we grilled in 16 degree weather (with the wind it felt even chillier). I made Jerk Marinade from the Helen Willinsky book Jerk: Barbecue from Jamaica on Sunday and rubbed it on two chicken breasts. That marinade never fails to satisfy and it is a little different each time depending on the strength of the pepper. We served it with a zucchini and yellow squash medley and some rice pilaf. To help with the whole Jamaican taste, we drank ginger beer. The ginger beer really played well with the marinade. We’ll be doing that again.
